The gastronomy of Ecuador is abundant and diverse because although Ecuador is a small country, it offers a gastronomic variety according to its four regions: Coast, Sierra, Amazon and Galapagos.
Today we present a typical recipe of the Sierra and that is very desired by the great majority of Ecuadorians from the 4 geographical regions.
Llapingacho is a potato omelette stuffed with cheese.
Ingredients:
Chola potato (it is a typical variety of the Ecuadorian Andes)
Mozzarella cheese
Salt
Preparation:
Peel the seeds and cook on moderate heat until they are very soft.
Remove from hot water and crush with a potato masher or bottle.
Once this is all crushed you start making tortillas by putting a piece of cheese as a filling. When they are ready, fry in the frying pan until golden brown.
The llapingachos accompany many typical dishes of the sierra such as baking, fried and are also served with a delicious sauce of mani, fried egg, chorizo, salad and avocado
